Quinoa has a high protein content and can replace meat in amino acid composition. When cooked, quinoa seeds have a delicate nutty flavor and a pleasantly grainy texture, and when combined with vegetables, they make them tastier and healthier.
We need:
✔ 1 glass of quinoa
✔ 1 carrot
✔ 250 g mushrooms of choice
✔ 250 g broccoli
✔ 80 g spinach
Step 1
Prepare the ingredients: wash the vegetables, cut the carrots into half rings, disassemble the broccoli into small inflorescences, chop the mushrooms.
Step 2
Put mushrooms, broccoli, and carrots in a heated pan, fry for 7-10 minutes. Add a little water, salt to taste, and simmer, covered, until tender. When vegetables are ready, add spinach, stir for 1-2 minutes and remove from heat.
Step 3
While the vegetables are cooking, rinse the quinoa and fry in a dry skillet until golden brown over medium heat.
Step 4
Reduce heat. Pour water over the quinoa so that the water level is 0.5-1 cm higher than the cereal, add salt, and close the lid. Cook for 15-20 minutes on low heat until the water is completely absorbed. The quinoa will become soft and increase in size.
Step 5
Mix the finished quinoa with the vegetables. Season, salt to taste. A healthy and tasty dish is ready. Bon Appetit!
